EXECUTIVE CHEF

The Executive Chef is responsible for the management of all food production at the Denver Country Club including the restaurant, banquet functions, and other outlets. The Exec Chef develops menus, food purchase specifications and standardized recipes. The Exec Chef supervises all food production while working and coaching side by side with the kitchen staff. Develops and monitors food and labor budget. Maintains highest professional food quality and sanitation standards at all times. 


RESPONSIBILITIES: 

  • Oversees cooking and presentation of all food insuring well garnished and attractive plates. Instructs cooks on fine points and details of cooking up to standard. 
  • Checks all specifications, portions, freshness, quality, and tastes all food prepared. Insures that everything is of highest quality and all items are properly dated and labeled and sanitized. 
  • Consults with the GM or Clubhouse Service Director concerning Club banquets, and the logistical needs from the kitchen. 
  • Utilizes leftovers, assist cooks in the planning of daily specials and instructs them on the preparation and cooking of items. 
  • Will assist in the cooking and carving of meats and the preparation of difficult items when needed or during rush periods. Will also be expected to assist in any busy station. 
  • Oversee the Purchasing Department and food items necessary for day-to-day operations. 
  • Manages and trains in the proper sanitation of the entire kitchen as far as health code regulations. 

 

        Administration/Supervisory Role

  • Sets and posts the staff schedules in a timely manner. Assures that there is adequate staff available to meet the kitchen's needs.
  • Brings employee performance issues to the GM's attention and works to write up any disciplinary actions to remedy situation. 
  • Interview all applicants for vacant positions. Refer top candidates to GM for final decision.
  • Will supervise all employees involved with the production preparation for ala carte cooking, as well as banquets and other parties. 
  • Will supervise cleaning and rotation of food items and perishables in all walk-ins, reach-ins, freezers, and dry storage room. 
  • Will supervise creation of an employee meals menu monthly abd the preparation and set-up of employee meals.
  • Will delegate jobs to employees during slow periods of the shift. May send employees home early if workload is light. 
  • Will design new menus and ideas for ala carte and banquet to simplify work processes in the kitchen.
  • Will train any kitchen employee - new employees, or existing, if new procedure is introduced. 
  • Will inspect all stations to assure proper cleaning and storage of items used.
  • Will attend weekly meetings with management in hospitality, and monthly meetings with upper management to keep abreast of current and future club happenings. 
  • Will work closely with Clubhouse Services Manager regarding food/service-related issues. 




JOB REQUIREMENTS:

  • 5 years + experience in a Chef position in a fine dining operation. Country club experience a plus.
  • Must be dependable and available to cover shifts if necessary for production needs. Must be willing to go beyond job responsibilities to assure that the Members needs are met. 
  • Must be able to work as a team interacting with all personalities within the department. 
  • Must have management experience be an assertive supervisor with excellent soft skills.
  • Positive attitude, professional demeanor and must be a good leader & communicator with all levels at the club.
  • Must have ability to lift 30 plus pounds. 
  • Neat appearance - Must be willing to be clean shaven, have good personal hygiene, and look professional at all times.
